I have bought skin on pork belly from US Wellness in the past and while it was fatty as it should be , there was a good amount of meat as well. What I received this time was almost completely fat. The recipe said to score the skin so that it is cut but not to cut into meat - and that was not a problem here.
The only "stripe" of meat in the piece I received was at the bottom, and even then, less than a half in. We agree the belly described in this review is an overly fatty cut. The skin is hard to cut, make sure to sharpen your knives. Too much fat. I got this frozen so after thawing in the fridge I opened the package and the one end was lovely streaked pork belly but the further I went slicing it was all fat. Not a speck of meat I stopped at that point and weighed the fatty piece and it was a lb of fat so out of my 4 lb slab I got 3 lbs of bacon slices. I was very disappointed. Too bad, this is too much fat even for pork belly. Perhaps hogs are a reason as suggested by the company, but it also looked like a lot of meat has even cut out, making the fat ration of these slabs extra high.
